In 2020, REAFE Studio was appointed to design the interior architecture for Fork, an innovative yet smartly priced restaurant situated within a Grade-II listed Georgian shop in the centre of Lewes, East Sussex. Working across 2,000 sq ft, the project required a sensitive response to the building’s historic fabric while creating a contemporary dining environment with its own distinct character.
Led by co-owner and chef Richard Falk—whose career includes two-Michelin-starred The Ledbury in Notting Hill and five years at Robin Gill’s Dairy in South London—Fork was envisioned as a welcoming space for locals to enjoy a modern British menu rooted in seasonality and craft.
The design needed to be completed, manufactured and installed within an ambitious three-month timeline. We achieved this while remaining firmly on budget. Our approach balanced respect for the building’s heritage with thoughtful, modern interventions, ensuring the space felt both grounded in place and confidently contemporary.
Key elements included a refined material palette, atmospheric lighting, and bespoke furniture designed specifically for the project. Architectural adjustments were carefully planned to enhance flow, comfort and clarity while preserving the building’s historic character. Branding and graphic design were developed in parallel, creating a cohesive identity that extended across signage, menus and printed collateral.
Our work encompassed concept development, planning, architectural interventions, bespoke furniture design and graphic design—delivering a complete and unified restaurant environment. The result is a warm, approachable and modern interior that reflects both the culinary ethos of Fork and the architectural heritage of Lewes.
